CHOCOLATE-DIPPED CANNOLI WAFFLES

INGREDIENTS

  • Non-stick cooking spray

  • 1 1/3 cups Hungry Jack® Complete Belgian Waffle Mix

  • 3/4 cup orange juice

  • 1 Magic Shell ® chocolate syrup flavored topping

Serving size (1/8 of recipe), calories 700 (calories from fat 180), total fat 21g (saturated fat 12g, trans fat g), cholesterol 30mg, sodium 300mg, total carbohydrates 48g (dietary fiber 2g, sugars 27g ), Protein 9g; Percentage of Daily Value*: Vitamin A 4%, Vitamin C 15%, Calcium 20%, Iron 10%.

  • GREASE Belgian waffle iron with nonstick cooking spray. Place over medium-high heat.

  • COMBINE waffle mix and orange juice in a medium bowl.
    Pour 1 cup of batter into the waffle maker. Cook for 1 1/2 to 2 minutes or until edges are crispy. Remove from the waffle maker. Repeat cooking the remaining waffle.

  • CUT the waffles into quarters and place on a wire rack. Place in the freezer for 15 minutes. Shake Magic Shell well according to label instructions. Pour half of the container into a small bowl. Dip the top and sides of each waffle in the chocolate sauce to coat evenly. Return the waffle, chocolate side up, to a wire rack. Cool until ready to use.

  • MIX the ricotta, icing sugar, marmalade, vanilla and chocolate chips in a medium bowl.

  • FILL the piping bag with a large decorative tip (6B) or the resealable plastic bag (cut corner of the reusable bag) with cannoli cream. Place 1/8 of the filling on each waffle. Sprinkle with cocoa and top with cherry. Serve immediately.

CANNOLI CREAM

  • 1 container  ricotta cheese with whole milk, drained

  • 1/3 cup confectioners' sugar

  • 1/4 cup sweet orange marmalade

  • 1 teaspoon vanilla extract, divided

  • 1/3 cup mini chocolate chips

  • Cocoa, to garnish

  • 8 maraschino cherries with stems, well drained
